Arugula Salad with Oregano Vinaigrette

This delicious salad recipe comes from Chef Lei Wang at Caesars Palace and utilizes garden ingredients to create a refreshing dish perfect for the end of summer!

Salad Ingredients

  • Yellow Watermelon
  • Tomatoes
  • Arugula 
  • Mint 

Dressing Ingredients

  • 1/4 oz fresh oregano 
  • 1/2 oz Dijon mustard
  • 1 oz lemon juice
  • 2 oz white balsamic reduction 
  • 1 oz water
  • 5 oz Olive Oil


  1. Add salad ingredients to a large bowl.
  2. Whisk together dressing ingredients and toss onto salad
